Sugarless Apple Pie

Ingredients

6 medium Golden Delicious apples, peeled, cored and sliced

1 1/2 tablespoons cornstarch

1 teaspoon cinnamon

Pie crust for 2-crust pie (homemade or purchased)

1 (6-ounce) can of frozen apple juice concentrate, thawed

3 tablespoons butter

Instructions

1. Put apples and thawed juice in a saucepan. Bring to a boil, reduce heat and simmer (covered) for five minutes.

2. Dissolve cornstarch in a small amount of water. Gently stir cornstarch into apple mixture. Bring to a boil, reduce heat, simmer, covered, 10-15 minutes or until apples begin to soften and mixture thickens.

3. Gently stir in cinnamon. Fill bottom crust with apple mixture. Dot butter on top of apples. Cover with top crust. (Note: to make a sparkly crust, mix a little sugar in a little milk and brush on top of crust before baking.) Cover the crust edges with a pie cover or foil to avoid burning edges (optional).

4. Bake at 400 to 425 degrees for first 12-15 minutes and then lower heat to 350 degrees and bake another 30-35 minutes until crust is nicely browned. (Note: The apples are already cooked, so you just need to bake the crust to perfection.)
